List of Ingredients
- 1 lb. medium shiitake mushrooms (8 to 10 per person), wiped clean and stemmed
- 1/2 cup plus 2 Tbsp olive oil
- 1/2 cup plus 2 Tbsp minced flat-leaf parsley
- 1/4 cup plus 1 Tbsp minced garlic
- Salt to taste
Instructions
- Preheat oven to 500 degrees (F). Lightly rub a shallow baking pan with olive oil. Arrange the mushrooms, stem side up, in the baking pan.
- In a small bowl, whisk together the oil, parsley and garlic; season with salt to taste. Spoon some of the mixture onto each mushroom.
- Bake the mushrooms for about 10 minutes, or until they soften and are lightly browned. Serve immediately.
