    Barbecue Beans

    Source of Recipe

From "Every Day's a Party" by Emeril Lagasse

    List of Ingredients

    • 1 lb. sliced bacon, chopped
    • 2 cups chopped yellow onions
    • 1 medium-size fresh jalapeño, seeded and chopped
    • 1/2 tsp freshly ground black pepper
    • 2 tsp chopped garlic
    • 1 lb. dried navy (white) beans, picked over and rinsed
    • 1/2 cup Steen's 100% Pure Cane Syrup or other cane syrup
    • 1/2 cup firmly packed light brown sugar
    • 2 cups catsup
    • 1/4 cup yellow mustard
    • 9 cups chicken broth
    • 2 bay leaves

    Instructions

    1. In a large pot over medium heat, fry the bacon until crispy, 8 to 10 minutes.

    2. Add the onions, jalapeño and black pepper and cook, stirring, until the onions are soft, 3 to 4 minutes. Add the garlic and beans and cook for 1 minute. Add the cane syrup, brown sugar, catsup and mustard, and mix well. Stir in the broth, add the bay leaves, and bring to a boil, then reduce heat to medium-low.

    3. Cook, uncovered, until the beans are tender, about 4 hours, stirring occasionally. Remove the bay leaves before serving.

      Makes about 8 servings.
