Black Refried Beans

List of Ingredients
- 1-1/2 cups black turtle beans (3 cups cooked)
- 1 large white onion, finely chopped
- 1 Tbsp butter or margarine
- 2 cloves garlic, minced
- 1/4 lb. bacon, cut into small pieces
- 1 tsp ground cumin
- 1 tsp dried Mexican oregano
- 1 tsp coarse ground pepper
- 1/2 tsp ground coriander
- 1 tsp salt
- 1 tsp cider vinegar
- 1/2 cup grated Monterey jack cheese
- 1/4 cup milk
Instructions
- Sort and wash the beans. Place in a Dutch oven, cover with cold water and put on to cook. As soon as the beans begin to soften (about 4 hours), cook onion in butter until soft and translucent. Add garlic and bacon and continue to cook slowly until the bacon is cooked but not crisp. (Do not cook too fast, or the garlic will burn and develop a bitter flavor.)
- Add the onion mixture to the beans with the cumin, oregano, pepper and coriander. Allow to cook another 2 hours.
- Transfer the beans to a greased cast-iron skillet. Coarsely mash the beans. Stir in the cheese, milk, salt and vinegar. Simmer until ready to serve.
