Bill's Slightly Glazed Carrots

List of Ingredients
- 2 lbs. baby carrots, peeled
- 1/8 tsp salt
- 2 Tbsp honey
- 2 tsp unsalted butter
- 1 Tbsp finely chopped fresh parsley
Instructions
- Place the carrots in a saucepan and barely cover with water. Add the salt; bring to a boil. Reduce the heat and simmer, uncovered, until the carrots are almost tender.
- Drain the carrots, reserving 1/2 cup of the liquid. Stir the honey and butter into the liquid.
- Put the carrots and liquid back into the saucepan. Bring to a boil, continuing to boil for a few minutes until glazed. Transfer to a warm serving dish and serve at once, garnishing with the parsley.
Makes 8 servings.
