    Bill's Slightly Glazed Carrots

    Adapted from "Entertaining Light"


    List of Ingredients


    • 2 lbs. baby carrots, peeled
    • 1/8 tsp salt
    • 2 Tbsp honey
    • 2 tsp unsalted butter
    • 1 Tbsp finely chopped fresh parsley


    Instructions


    1. Place the carrots in a saucepan and barely cover with water. Add the salt; bring to a boil. Reduce the heat and simmer, uncovered, until the carrots are almost tender.

    2. Drain the carrots, reserving 1/2 cup of the liquid. Stir the honey and butter into the liquid.

    3. Put the carrots and liquid back into the saucepan. Bring to a boil, continuing to boil for a few minutes until glazed. Transfer to a warm serving dish and serve at once, garnishing with the parsley.

      Makes 8 servings.
