    Blue Cheese-Stuffed Potatoes

    List of Ingredients


    • 4 medium baking potatoes
    • ½ cup sour cream
    • ¼ cup crumbled or mashed blue cheese
    • ¼ cup milk
    • ¼ cup butter or margarine
    • Salt and black pepper, to taste
    • 4 slices bacon, crisp-cooked, drained and crumbled


    Instructions


    1. Scrub potatoes well.
      Bake at 375º to 400º F for about 1 hour or until potatoes are tender.

    2. Cut a lengthwise slice from top of each potato. Scoop out inside of each potato, leaving about ¼-inch shell.

    3. Place potato pulp in mixer bowl, and mash with sour cream, blue cheese, milk, butter, salt and pepper. Beat until potatoes are fluffy. Spoon mixture lightly back into potato shells. Place on baking sheet; return to 400º oven until heated through, about 12 to 15 minutes. Sprinkle with crumbled bacon.

      Serves 4
