Broccoli Blue

List of Ingredients
- 2 lbs. fresh broccoli
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 (3-ounce) pkg. cream cheese, softened
- 3/4 cup crumbled blue cheese
- 1 (8-ounce) container sour cream
- 1/3 cup crushed round buttery crackers
Instructions
- Remove and discard broccoli leaves and tough ends of stalks; cut into bite-size pieces. Arrange broccoli in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender. Set broccoli aside, and keep warm.
- Melt butter in a saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Add cream cheese and blue cheese; cook, stirring constantly, until smooth. Add sour cream, and bring just to a boil.
- Remove from heat, and pour over broccoli; toss gently. Place broccoli mixture in a lightly greased 1-quart baking dish; sprinkle with cracker crumbs. Bake, uncovered, at 350º F for 30 minutes.
