Buttermilk-Fried Vidalia Onion Rings

- 2 large Vidalia onions
- 1 cup unbleached all-purpose flour
- 1 tsp baking powder
- 1 Tbsp sugar
- Pinch of cayenne pepper
- Kosher salt
- 2 cups buttermilk
- Corn or canola oil for frying
Instructions
- Cut the onions into ½-inch slices and separate into rings.
In a large bowl, whisk together the flour, baking powder, sugar, and cayenne pepper. Season with salt. Add the buttermilk and whisk until smooth.
- Pour oil into a deep, heavy-bottomed saucepan or Dutch oven to a depth of 2 inches and heat over high heat until hot but not smoking.
- Working in batches, dip the onion rings in the batter, letting the excess drip back into the bowl, and fry until golden brown, 2 to 3 minutes. Transfer to paper towels to drain and keep warm in a low oven while frying the rest. Sprinkle with additional salt and serve at once.
