    Caramelized Onion and Potato Flan

    List of Ingredients


    • 4 Tbsp butter
    • 3 to 4 large yellow onions, thinly sliced
    • 8 to 10 large Yukon Gold or russet potatoes, peeled and thinly sliced medallion-style
    • Salt and fresh ground pepper to taste
    • 3/4 lb. Emmenthal or Gruyère cheese, grated


    Instructions


    1. In a large skillet over medium heat, sauté onions in butter until deep golden brown, about 20 minutes. Cook slowly to caramelize.

    2. Grease a 9 x 13-inch or large oval baking dish. Layer half of the potato slices in a shingle fashion and season. Top with half of the onions and cheese. Repeat next layer, ending with cheese.

    3. Bake in a preheated 350º F oven for 50 to 60 minutes, or until potatoes are fork-tender. Cover loosely with foil if potatoes get too brown before cooking time is finished. Remove from oven and let stand for several minutes. Cut into squares or wedges.

      Serves 8

      NOTES

      • Caramelized Onion and Potato Flan is an excellent accompaniment to pork tenderloin or beef fillet.

      • This is a great potluck dish.
