    Catahoula Corn-Patch Corn

    List of Ingredients


    • 8 ears fresh sweet corn or 1 (1-pound) package frozen cream-style corn
    • 1 slice bacon or 1 tablespoon bacon grease
    • 4 Tbsp butter
    • ¼ cup heavy cream
    • 1 tsp sugar
    • 1 tsp salt
    • ½ tsp pepper


    Instructions


    1. If using fresh corn, cut the kernels off, close to the cob. Then scrape the ear to remove all the remaining milk and kernels.

    2. Heat the bacon or the bacon grease and the butter in a large cast-iron skillet. Add the corn, corn milk, and cream. Add the sugar, salt, and pepper and cook on medium heat on top of the stove, stirring often, for about 15 minutes.

    3. Preheat the oven to 450° F.
      Place the skillet in the oven for 20 to 25 minutes, stirring occasionally.

      Makes 6 to 8 servings



    Final Comments


    Corn burns easily, so stir often when on direct heat of the stove.
