    Cheesy Broccoli Fritters

    List of Ingredients


    • -- Fritters --
    • 1 cup milk
    • 1 egg
    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • 3/4 tsp salt
    • 1-1/2 cups fresh broccoli, cut into 1-inch pieces
    • Cooking oil or shortening, for deep-frying
    • *
    • -- Cheese Sauce --
    • 1 cup milk
    • 2 ounces American cheese, cut into cubes (1/2 cup)
    • 2 ounces process Swiss cheese, cut into cubes (1/2 cup)
    • 2 Tbsp all-purpose flour
    • 2 Tbsp butter, softened


    Instructions


    1. For the fritters: Pour 1 cup milk, egg, 2 cups flour, baking powder, salt and broccoli in blender container. Blend until broccoli is finely chopped. (When necessary, stop blender and use rubber spatula to scrape down sides of container.)

    2. Drop broccoli mixture from tablespoon into deep hot oil (375 degrees). Fry a few at a time, for 3 to 4 minutes or until golden brown. Drain on paper towels.

    3. For the cheese sauce: Put 1 cup milk, American cheese, Swiss cheese, 2 tablespoons flour and softened butter in blender container; blend until ingredients are combined. In saucepan, cook and stir mixture over low heat until thickened and bubbly.

      Serve cheese sauce over fritters.

      Makes 24 fritters.
