Cheesy Broccoli Fritters

- 1 cup milk
- 1 egg
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 1-1/2 cups fresh broccoli, cut into 1-inch pieces
- Cooking oil or shortening, for deep-frying

- -- Cheese Sauce --
- 1 cup milk
- 2 ounces American cheese, cut into cubes (1/2 cup)
- 2 ounces process Swiss cheese, cut into cubes (1/2 cup)
- 2 Tbsp all-purpose flour
- 2 Tbsp butter, softened
Instructions
- For the fritters: Pour 1 cup milk, egg, 2 cups flour, baking powder, salt and broccoli in blender container. Blend until broccoli is finely chopped. (When necessary, stop blender and use rubber spatula to scrape down sides of container.)
- Drop broccoli mixture from tablespoon into deep hot oil (375 degrees). Fry a few at a time, for 3 to 4 minutes or until golden brown. Drain on paper towels.
- For the cheese sauce: Put 1 cup milk, American cheese, Swiss cheese, 2 tablespoons flour and softened butter in blender container; blend until ingredients are combined. In saucepan, cook and stir mixture over low heat until thickened and bubbly.
Serve cheese sauce over fritters.
Makes 24 fritters.
