    Corn Roasted with Herb Butter

    List of Ingredients


    • 6 ears fresh corn
    • 3/4 cup butter, softened
    • 1-1/2 Tbsp minced parsley
    • 1-1/2 Tbsp lemon juice
    • 2-1/2 Tbsp minced green onion
    • 1/4 tsp freshly grated nutmeg
    • 1/2 tsp salt and pepper


    Instructions


    1. Mix all but corn together; cover and refrigerate for at least 1 hour.

    2. Spread each ear of corn with 1 tablespoon of the herb butter. Wrap each ear in foil.

    3. Roast corn on barbecue or broil 4 inches from heat for 30 minutes or until kernels are tender. Unwrap, detach husks, and spread with remaining butter.

      Serves 6
