    Corrie's Bacon Creamed Spinach

    From "The Deen Family Cookbook" by Paula Deen

    List of Ingredients


    • 3 slices bacon
    • ½ cup finely chopped yellow onion (about ½ medium onion)
    • Two 6-ounce bags baby spinach
    • ¼ cup heavy cream
    • Salt and pepper


    Instructions


    1. In a large skillet, cook the bacon until crisp, about 7 minutes. Transfer it to a paper towel-lined plate to drain.

    2. Pour off all but 1 tablespoon of fat from the skillet. Add the onion and cook, stirring, until softened, 3 to 5 minutes. Add the spinach and toss well until wilted.

    3. Add the cream, and salt and pepper to taste. Let the mixture bubble over medium heat until the cream is thickened and clinging to the spinach, about 10 minutes. Crumble the bacon over the spinach, stir, and serve.

      Serves 2 to 4
