    Creamed Spinach with Crunchy Topping

    Recipe Introduction

    "You are more than welcome to make your own breadcrumb topping for this delightful side. I freeze stale bread just for this occasion. When I need breadcrumbs, I pull the bread out of the freezer, place it in a food processor with a little melted butter and fresh herbs, give it a quick pulse, and voilà: herbed breadcrumbs."

    List of Ingredients

    â—¦ 3 (10-ounce) packages frozen leaf spinach, thawed
    â—¦ 1 (8-ounce) package cream cheese, softened
    â—¦ ½ cup whipping cream
    â—¦ 6 tablespoons unsalted butter, melted
    â—¦ ½ teaspoon salt
    â—¦ ½ teaspoon black pepper
    â—¦ â…› teaspoon ground nutmeg
    â—¦ 1 tablespoon lemon zest (from 1 lemon)
    â—¦ 1 cup croutons, coarsely crushed

    Recipe

    Drain the spinach well, pressing between paper towels to remove excess moisture. Place in a bowl; stir in the cream cheese, whipping cream, and 3 tablespoons of the butter. Stir in the salt, pepper, nutmeg, and lemon zest.

    Spoon into a buttered 8-inch square baking dish. Cover and refrigerate until ready to bake. (This may be prepared in the morning of the day it is served.)

    Preheat the oven to 350° F. Sprinkle the crushed croutons over the top and drizzle with the remaining 3 tablespoons butter. Bake, uncovered, in the preheated oven until bubbly, about 25 minutes.

    Serves 9
