    Creamed Spinach with Nutmeg and Parmesan

    From "The Yellow Farmhouse Cookbook" by Christopher Kimball

    List of Ingredients


    • 2 cups heavy cream
    • 12 Tbsp (1½ sticks) unsalted butter
    • 3 pounds fresh spinach, trimmed and washed
    • 1 cup chopped onion
    • 1 tsp salt
    • Freshly ground black pepper to taste
    • â…” cup grated Parmesan cheese
    • â…› tsp freshly grated nutmeg


    Instructions


    1. Heat the heavy cream in a large sauté pan and let it simmer for 5 minutes or until it has started to reduce and thicken. Add the butter and heat until it melts.

    2. Add the spinach and cook, stirring, for 5 minutes or until it is wilted and the cream starts to thicken further.

    3. Add the onion, salt, pepper, Parmesan, and nutmeg and stir until the cheese has melted.

      Serves 4
