Creamed Spinach with Nutmeg and Parmesan

- 2 cups heavy cream
- 12 Tbsp (1½ sticks) unsalted butter
- 3 pounds fresh spinach, trimmed and washed
- 1 cup chopped onion
- 1 tsp salt
- Freshly ground black pepper to taste
- â…” cup grated Parmesan cheese
- â…› tsp freshly grated nutmeg
Instructions
- Heat the heavy cream in a large sauté pan and let it simmer for 5 minutes or until it has started to reduce and thicken. Add the butter and heat until it melts.
- Add the spinach and cook, stirring, for 5 minutes or until it is wilted and the cream starts to thicken further.
- Add the onion, salt, pepper, Parmesan, and nutmeg and stir until the cheese has melted.
