Creamy Twice-Baked Potatoes

- 2 medium baking potatoes
- 2 Tbsp butter, softened
- 1 Tbsp milk
- 1/4 tsp salt
- 1 (3-oz.) pkg. cream cheese, cubed
- 2 Tbsp sour cream
Instructions
- Wash, pierce, and bake potatoes at 375 degrees (F) for one hour or until tender. Cool.
- Cut a thin slice off the top of each potato. Scoop out the pulp and place in mixing bowl. Add butter, milk, and salt; beat until fluffy. Beat in cream cheese and sour cream. Spoon into potato shells; sprinkle with paprika.
- Place stuffed potatoes on baking sheet and bake, uncovered, at 350 degrees for 20 to 25 minutes or until potatoes are thoroughly heated and tops are browned.
