Easier-than-Pie Oven Fries

"There are only a few things that can convince me to turn on the fryer, such as buttermilk fried chicken and fried zucchini. For everything else, the oven does a fine and dandy job. Fries are no exception. These are not French fries on a diet. On the contrary, they are all crunch and flavor, and practically guiltless!"

â—¦ 2 large baking potatoes (about 1 ¾ pounds), cut into 4-by-½-inch sticks
â—¦ ¼ cup extra-virgin olive oil
â—¦ 1 teaspoon minced fresh rosemary
â—¦ Sea salt
â—¦ Freshly ground black pepper
Recipe
Preheat the oven to 400° F.
Toss the potatoes in the olive oil in a large bowl or plastic bag and spread onto a baking sheet in a single layer. Bake on the top rack of the oven, turning a couple of times with a spatula, until golden and crispy, about 35 minutes. It's really important that you turn the fries partway through baking so that they crisp evenly.
Remove the fries from the oven, sprinkle with rosemary, and return to the oven to bake for 5 minutes more. Season generously with salt and pepper and serve hot.
