- 1 medium onion, cut into thin wedges (1/2 cup)
- 1 Tbsp butter or margarine
- 1 Tbsp olive oil
- 6 green onions, cut into 1-inch pieces (1/2 cup)
- 3 Tbsp hoisin sauce
- 1 tsp paprika
- 1 (15-1/4-oz.) can whole kernel corn, drained
- 1 (15-oz.) can black beans, rinsed and drained
- 3/4 cup chopped celery
- 1/2 cup finely chopped red sweet pepper
Instructions
- In a large skillet, cook and stir onion wedges in hot butter and olive oil over medium heat about 4 minutes, or until tender but not brown.
- Stir in green onions, hoisin sauce, and paprika. Cook and stir 1 minute more.
- Add corn, beans, celery and red sweet pepper. Cook and stir until heated through. Transfer to a serving bowl.
Makes 6 side-dish servings.
