French Beans in Shallot Butter

- 1 lb. French beans or 1-1/2 lbs. green beans, trimmed *
- 1 Tbsp butter (or margarine)
- 2 Tbsp minced shallots
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
Instructions
- Place steamer basket in a large saucepan; add enough water to reach just under the basket. Add beans to basket; bring water to a boil. Cover and steam beans for 3 to 4 minutes, until tender-crisp. (Can be made ahead. Immediately rinse beans under cold running water until cool. Wrap and refrigerate up to 24 hours; return beans to room temperature).
- Melt butter in a large skillet over medium-high heat; add shallots and cook 1 minute. Add beans, salt, and pepper. Cook 1 to 2 minutes more, until heated through.
Makes 8 servings.
Final Comments
* If using green beans, prepare recipe as directed, except steam beans 5 to 7 minutes and increase butter to 2 tablespoons, shallots to 1/4 cup and salt to 1/2 teaspoon.
