Fried Squash

List of Ingredients
- 2 pounds yellow summer squash, washed and sliced
- 2 tsp salt
- ¼ tsp ground black pepper
- 1 cup cornmeal
- 1 cup self-rising flour
- 1 cup vegetable oil
- ¼ cup butter
Instructions
- Place squash slices in a large bowl. Add salt and pepper, tossing gently to coat squash.
- In a separate large bowl, combine cornmeal and self-rising flour. Add squash, tossing gently to coat.
- Heat vegetable oil and butter in a large cast-iron skillet over medium-high heat. Fry squash in three or four batches until golden brown, turning several times to ensure even browning. Drain on paper towels.
Makes 6 to 8 servings.
