    Fried Squash

    List of Ingredients


    • 2 pounds yellow summer squash, washed and sliced
    • 2 tsp salt
    • ¼ tsp ground black pepper
    • 1 cup cornmeal
    • 1 cup self-rising flour
    • 1 cup vegetable oil
    • ¼ cup butter


    Instructions


    1. Place squash slices in a large bowl. Add salt and pepper, tossing gently to coat squash.

    2. In a separate large bowl, combine cornmeal and self-rising flour. Add squash, tossing gently to coat.

    3. Heat vegetable oil and butter in a large cast-iron skillet over medium-high heat. Fry squash in three or four batches until golden brown, turning several times to ensure even browning. Drain on paper towels.

      Makes 6 to 8 servings.
