    Golden Mashed Potatoes

    • 2 pounds Yukon Gold potatoes (about 5), peeled, cut into eighths
    • 2 tsp salt
    • 1 cup heavy cream
    • 1/2 cup unsalted butter (1 stick)
    • 1/2 tsp white pepper


    Instructions


    1. Bring the potatoes, 1 teaspoon salt, and enough water to cover to a boil in a large saucepan. Cook the potatoes until just tender, about 20 minutes.

    2. Drain the potatoes, return them to the saucepan, and use a potato masher or a fork to mash the potatoes until smooth.

    3. Stir in the cream, butter, remaining salt, and pepper, and serve immediately.

      Makes 8 (1/2-cup) servings.
