    Great Greek Green Beans

    List of Ingredients


    • 1/2 cup chopped onion
    • 1 clove garlic, minced
    • 2 Tbsp olive oil
    • 1 (28-oz.) can diced tomatoes
    • 1/4 cup sliced pitted ripe olives
    • 1 tsp dried oregano
    • 2 pkgs. (9 oz. each) or 1 (16-oz.) pkg. frozen French-cut green beans, thawed and drained
    • 1/2 cup crumbled feta cheese (2 ounces)


    Instructions


    1. In a large skillet, cook onion and garlic in hot olive oil for about 5 minutes or until tender.

    2. Add undrained tomatoes, olives and oregano. Bring to boiling; reduce heat. Boil gently, uncovered, for 10 minutes. Add beans. Return to boiling. Boil gently, uncovered, about 8 minutes or until of desired consistency and beans are tender.

      Transfer to a serving bowl; sprinkle with feta cheese. If desired, serve with a slotted spoon.

      Makes 6 side-dish servings.
