Green Beans with Pancetta

- 1-1/2 lbs. green beans, trimmed and halved, strings removed if necessary
- 6 ounces pancetta,* sliced about 1/8-inch thick, cut into thin strips
- 1/4 cup red or white wine vinegar
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Bring a large pan of water to a boil. Add the beans and cook until tender-crisp, about 5 to 7 minutes. Drain well, then transfer to a bowl.
- Place the pancetta in a large skillet (a nonstick surface is preferable) over medium heat and cook until lightly browned, about 3 minutes. Add the vinegar and shake the pan to evenly distribute it. Cover and cook about 2 minutes, until the pancetta is cooked through, and some of the vinegar is absorbed.
- Remove the pan from the heat; pour the pancetta and vinegar over the beans, and toss to combine. Season to taste with salt and pepper. Serve immediately.
Makes 6 to 8 servings.
* Pancetta is an Italian cured pork similar to bacon, which can be used as a substitute.
