Green Beans with Tomatoes and Herbs

List of Ingredients
- 1 tsp extra-virgin olive oil
- 2 cloves garlic, finely minced
- 1 small onion, minced
- 1 large ripe tomato, diced, or 1/2 can (14 ounces) diced tomatoes, drained
- 1 tsp minced fresh basil (or 1/2 tsp dried)
- 1 tsp minced fresh oregano (or 1/2 tsp dried)
- 3/4 lb. trimmed green beans
- Salt and freshly ground black pepper, to taste
Instructions
- In a non-stick skillet, heat oil over medium heat. Add garlic and onion, and saute 5 minutes.
- Add tomato, basil and oregano. Cook 2 minutes.
- Add green beans. Cover and cook 6 minutes. Add salt and pepper, to taste.
Makes 4 servings.
