Hardin's Hardy Potatoes

List of Ingredients



• 9 medium baking potatoes, peeled
  
• ½ stick butter
  
• 1 ½ teaspoons salt
  
• ½ teaspoon pepper
  
• 3 tablespoons chopped green onions
  
• â…” cup heated milk
  
• 1 cup heavy whipping cream
  
• 1 ½ cups grated cheese
  
• Paprika
  






Instructions



1. Boil the potatoes until tender. Drain, mash, and whip them with a mixer. Add the butter, salt, pepper, onions, and milk. Beat until light and fluffy. Pour into a buttered shallow baking dish (this may be done ahead of time).
   
   
2. Whip the cream and add the grated cheese. Spread evenly over potatoes. Sprinkle the top with paprika and bake at 350° for 25 minutes, or until golden brown.
   
   Serves 10
