    Herbed Potato Wedges with Spicy Catsup

    Adapted from "Weber's Art of the Grill"


    List of Ingredients


    • -- Potatoes --
    • 3 medium baking potatoes, scrubbed
    • 2 Tbsp olive oil
    • 1/2 tsp salt
    • Freshly ground black pepper to taste
    • 1/2 tsp dried basil
    • .
    • -- Catsup --
    • 1/2 cup catsup
    • 1/4 cup chili sauce
    • 1 Tbsp balsamic vinegar
    • 1/8 to 1/4 tsp cayenne pepper


    Instructions


    1. To prepare potatoes: Cut each potato into 8 wedges and toss with olive oil, salt, pepper and basil. Spread in a single layer in a large baking pan and bake in a preheated 375-degree oven until tender, about 30 minutes.

    2. To prepare catsup: While potatoes are baking, stir together catsup, chili sauce, vinegar and cayenne. Serve in a bowl to the side of the potatoes.

      Makes 4 servings.
