Herbed Potato Wedges with Spicy Catsup

- 3 medium baking potatoes, scrubbed
- 2 Tbsp olive oil
- 1/2 tsp salt
- Freshly ground black pepper to taste
- 1/2 tsp dried basil
- .
- -- Catsup --
- 1/2 cup catsup
- 1/4 cup chili sauce
- 1 Tbsp balsamic vinegar
- 1/8 to 1/4 tsp cayenne pepper
Instructions
- To prepare potatoes: Cut each potato into 8 wedges and toss with olive oil, salt, pepper and basil. Spread in a single layer in a large baking pan and bake in a preheated 375-degree oven until tender, about 30 minutes.
- To prepare catsup: While potatoes are baking, stir together catsup, chili sauce, vinegar and cayenne. Serve in a bowl to the side of the potatoes.
Makes 4 servings.
