    Italian Pattypan Squash

    List of Ingredients


    • 2 tsp virgin olive oil
    • 1 shallot, thinly sliced
    • 2 to 3 small pattypan squash, diced
    • 1/2 Walla Walla or other sweet onion, diced
    • 1/4 tsp kosher or sea salt
    • 1/2 tsp freshly ground black pepper
    • 1/2 tsp lemon thyme or any thyme, stemmed
    • 1/2 tsp oregano, stemmed


    Instructions


    1. In a heavy frying pan, heat oil and shallot over medium-high heat and cook for 1 minute.

    2. Add pattypan squash and onion; sprinkle with salt and pepper and cook, stirring, for 1 minute.

    3. Add herbs, stir to coat, reduce heat to low, cover pan and cook until tender (3 to 4 minutes). Serve warm.

      Serves 4
