Italian Pattypan Squash

List of Ingredients
- 2 tsp virgin olive oil
- 1 shallot, thinly sliced
- 2 to 3 small pattypan squash, diced
- 1/2 Walla Walla or other sweet onion, diced
- 1/4 tsp kosher or sea salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp lemon thyme or any thyme, stemmed
- 1/2 tsp oregano, stemmed
Instructions
- In a heavy frying pan, heat oil and shallot over medium-high heat and cook for 1 minute.
- Add pattypan squash and onion; sprinkle with salt and pepper and cook, stirring, for 1 minute.
- Add herbs, stir to coat, reduce heat to low, cover pan and cook until tender (3 to 4 minutes). Serve warm.
