Lemon-Herb Green Beans & Red Potatoes

- 1 lb. fresh green beans, cut into 2-inch pieces
- 3 red potatoes, cubed
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 Tbsp fresh lemon juice
- 1 Tbsp chopped fresh basil
- 1 tsp chopped fresh thyme
- 2 garlic cloves, minced
- Salt and black pepper to taste
Instructions
- In a large saucepan, bring 2 cups water to a boil. Add green beans and potatoes and reduce heat to low. Cover and simmer 15 minutes, or until tender. Drain and place in a serving bowl.
- Meanwhile, in a small skillet, heat olive oil, butter, lemon juice, basil, thyme, and garlic until butter melts. Cook 2 minutes or until garlic is soft, stirring constantly. Pour over green beans and potatoes and toss to coat the vegetables. Season with salt and pepper; serve.
