    Lemon-Herb Green Beans & Red Potatoes

    List of Ingredients


    • 1 lb. fresh green beans, cut into 2-inch pieces
    • 3 red potatoes, cubed
    • 1 Tbsp olive oil
    • 1 Tbsp butter
    • 1 Tbsp fresh lemon juice
    • 1 Tbsp chopped fresh basil
    • 1 tsp chopped fresh thyme
    • 2 garlic cloves, minced
    • Salt and black pepper to taste


    Instructions


    1. In a large saucepan, bring 2 cups water to a boil. Add green beans and potatoes and reduce heat to low. Cover and simmer 15 minutes, or until tender. Drain and place in a serving bowl.

    2. Meanwhile, in a small skillet, heat olive oil, butter, lemon juice, basil, thyme, and garlic until butter melts. Cook 2 minutes or until garlic is soft, stirring constantly. Pour over green beans and potatoes and toss to coat the vegetables. Season with salt and pepper; serve.

      Serves 4
