Lou's Potatoes

List of Ingredients
- 8 medium baking potatoes, scrubbed
- 1 can (10-1/2 ounces) cream of chicken soup
- 1 cup sour cream
- 1/2 cup (1 cube) butter, melted
- 1-1/2 cups grated Cheddar cheese
- Salt and pepper to taste
Instructions
- Put potatoes into a large pot, cover with water, and bring to a boil. Cook until tender when pierced with a knife. Remove from water. When cool, peel and grate into a large bowl.
- Add soup, sour cream, melted butter, and 1/2 cup cheese. Taste and season with salt and pepper as needed.
- Transfer potatoes to a 9- x 13-inch baking dish and top with remaining 1 cup cheese. Bake in a preheated 350° F oven 45 to 60 minutes or until bubbly.
Makes 8 servings.
