    Maple Mashed Sweet Potatoes

    List of Ingredients


    • 6 pounds sweet potatoes (about 5), scrubbed
    • 1 stick (8 Tbsp) unsalted butter, melted
    • ½ cup heavy cream, warmed
    • 2 Tbsp pure maple syrup
    • 1 tsp salt
    • ½ tsp freshly ground black pepper


    Instructions


    1. Put a rack in lower third of oven and preheat oven to 400° F. Line a baking sheet with sides with foil.

    2. Prick potatoes with a fork. Bake on foil-lined baking sheet until very tender, about 1 hour.

    3. When cool enough to handle, halve potatoes lengthwise and scoop flesh into a large bowl; discard skins. Mash potatoes with a potato masher or, for a smoother purée, force through a potato ricer into a bowl. Stir in butter, cream, syrup, and salt and pepper.

      Serves 10
