    List of Ingredients


    • 1/4 cup olive oil
    • 1 Tbsp bacon drippings
    • 1 medium-large onion, chopped
    • 1 medium-large bell pepper, chopped
    • 3 stalks celery, diced
    • 2 Tbsp Creole seasoning
    • 1 bunch green onions, minced
    • 1 (16-oz.) can stewed tomatoes (with liquid)
    • 2 lbs. fresh or frozen yellow corn
    • 1 tsp sugar
    • Pinch garlic powder
    • Dash Worcestershire sauce


    Instructions


    1. In heavy pan, heat oil and bacon drippings until hot.

    2. Saute onions, bell pepper and celery until soft. Add one-third of the Creole seasoning. Stir in green onions and saute until tender. Add another one-third of the Creole seasoning.

    3. Pour in stewed tomatoes with their liquid, chopping or breaking up the tomatoes with your fingers. Simmer mixture for 5 to 10 minutes. Add corn, sugar, garlic powder, Worcestershire sauce and remaining seasoning. Simmer over a low flame to desired tenderness -- Sue prefers "smothered to death," but crisper vegetables are fine, too.

      Makes 6 to 8 servings.



    Final Comments


    The addition of chicken, sausage or shrimp can turn this side dish into a main course.
