    Marinated Grilled Squash

    List of Ingredients


    • 3 medium-size yellow squash, sliced diagonally
    • 3 medium-size zucchini, sliced diagonally
    • 1/3 cup olive oil
    • 1 Tbsp lemon juice
    • 1 clove garlic, pressed
    • 1/2 tsp marjoram
    • 1/4 tsp salt
    • 1/4 tsp pepper


    Instructions


    1. Place squash and zucchini slices in a heavy-duty zip-top plastic bag.

    2. Whisk together the olive oil, lemon juice, pressed garlic, marjoram and salt and pepper. Pour over vegetables in bag; chill 1 hour.

    3. Remove vegetables from marinade, reserving marinade. Arrange in a grill basket.

    4. Grill, covered with grill lid, over medium-high heat (350 to 400 degrees) for 20 minutes or until crisp-tender, turning and brushing occasionally with marinade.

      Makes 6 servings.
