    Okie Dokie Sliced Baked Potatoes

    List of Ingredients


    • 4 medium potatoes
    • 1 tsp salt
    • 2 to 3 Tbsp melted butter
    • 2 to 3 Tbsp chopped fresh herbs (parsley, chives, thyme, or sage)
    • 4 Tbsp grated Cheddar cheese
    • 1-1/4 Tbsp Parmesan cheese


    Instructions


    1. Preheat oven to 425 degrees. Peel the potatoes if the skin is tough; otherwise, just scrub and rinse them. Cut the potatoes into thin slices but not all the way through. (Use a handle of a spoon instead of a knife to avoid cutting all the way through.)

    2. Put the potatoes in a baking dish and fan out slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs. Bake for about 50 minutes. Remove from the oven and sprinkle with cheeses.

    3. Bake for another 10 to 15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. (Check with a fork.)

      Makes 4 servings.
