Okie Dokie Sliced Baked Potatoes

- 4 medium potatoes
- 1 tsp salt
- 2 to 3 Tbsp melted butter
- 2 to 3 Tbsp chopped fresh herbs (parsley, chives, thyme, or sage)
- 4 Tbsp grated Cheddar cheese
- 1-1/4 Tbsp Parmesan cheese
Instructions
- Preheat oven to 425 degrees. Peel the potatoes if the skin is tough; otherwise, just scrub and rinse them. Cut the potatoes into thin slices but not all the way through. (Use a handle of a spoon instead of a knife to avoid cutting all the way through.)
- Put the potatoes in a baking dish and fan out slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs. Bake for about 50 minutes. Remove from the oven and sprinkle with cheeses.
- Bake for another 10 to 15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. (Check with a fork.)
Makes 4 servings.
