Onion Rings

List of Ingredients
- 2 large vidalia or other sweet onions, peeled
- 2 cups buttermilk
- 1½ cups flour
- ½ cup white cornmeal
- Cayenne
- Salt and freshly ground black pepper
- Vegetable oil
Instructions
- Cut onions into ½-inch-thick slices, and separate into rings. Pour buttermilk into a bowl. Combine flour and cornmeal in another bowl and season liberally with cayenne, salt, and pepper.
- Pour oil into a heavy skillet to a depth of 3 inches and heat over medium-high heat. Dip a few rings into buttermilk, shake off excess, then repeat, coating again with both buttermilk and flour mixture.
- When oil is very hot (375°F), add onions and cook until golden, about 3 minutes. Drain on paper towels and sprinkle with salt. Fry remaining onions in batches.
Serves 2 to 4
Final Comments
If vidalias or other sweet onions are unavailable, use yellow or red onions, and soak the raw onions in milk for one hour to sweeten them and soften their bite.
