    River Road Baked Sweet Potatoes with Marshmallows

    List of Ingredients


    • 8 medium-size sweet potatoes
    • 1 cup milk
    • 1 tsp vanilla
    • 3 Tbsp sugar
    • 1/2 stick butter
    • 1/4 tsp ground cinnamon
    • Few dashes nutmeg
    • 1 Tbsp orange juice
    • Marshmallows


    Instructions


    1. Bake sweet potatoes in preheated 350-degree (F) oven until done. Peel hot potatoes and put through a ricer until mashed. Scald milk and add vanilla, sugar and butter.

    2. To potatoes, add cinnamon, nutmeg and orange juice. Stir. Add milk mixture to potatoes.

    3. Layer one-half of potato mixture in a buttered casserole; add a layer of marshmallows and remaining potatoes. Bake at 350 degrees until very hot. Add a top layer of marshmallows and brown.

      Makes 8 to 10 servings.
