River Road Baked Sweet Potatoes with Marshmallows

- 8 medium-size sweet potatoes
- 1 cup milk
- 1 tsp vanilla
- 3 Tbsp sugar
- 1/2 stick butter
- 1/4 tsp ground cinnamon
- Few dashes nutmeg
- 1 Tbsp orange juice
- Marshmallows
Instructions
- Bake sweet potatoes in preheated 350-degree (F) oven until done. Peel hot potatoes and put through a ricer until mashed. Scald milk and add vanilla, sugar and butter.
- To potatoes, add cinnamon, nutmeg and orange juice. Stir. Add milk mixture to potatoes.
- Layer one-half of potato mixture in a buttered casserole; add a layer of marshmallows and remaining potatoes. Bake at 350 degrees until very hot. Add a top layer of marshmallows and brown.
Makes 8 to 10 servings.
