Roasted New Potatoes

- 3 lbs. small red potatoes (or yellow Yukon Gold), scrubbed and quartered
- 2 Tbsp melted butter or olive oil
- 1/2 tsp salt
- 1/8 tsp freshly ground pepper
Instructions
- Heat oven to 450 degrees (F). Toss potatoes, butter, salt and pepper in a jelly-roll pan; arrange potatoes in a single layer. Roast potatoes on bottom oven rack 45 to 50 minutes, until golden brown and tender.
Makes 6 servings.
