• 3 lbs. small red potatoes (or yellow Yukon Gold), scrubbed and quartered
  
• 2 Tbsp melted butter or olive oil
  
• 1/2 tsp salt
  
• 1/8 tsp freshly ground pepper
  






Instructions



1. Heat oven to 450 degrees (F). Toss potatoes, butter, salt and pepper in a jelly-roll pan; arrange potatoes in a single layer. Roast potatoes on bottom oven rack 45 to 50 minutes, until golden brown and tender.
   
   Makes 6 servings.
