    Roasted Potatoes with Rosemary & Sage

    List of Ingredients


    • 8 medium-size new potatoes
    • 6 sprigs fresh rosemary
    • 6 sprigs fresh sage
    • 1/4 cup extra-virgin olive oil
    • 3/4 tsp salt
    • Freshly ground black pepper to taste


    Instructions


    1. Scrub the potatoes and cut in halves.

    2. Lay the sprigs of rosemary and sage in a baking dish and place the potatoes on top. Drizzle with olive oil; sprinkle with salt and pepper.

    3. Roast in a preheated 350-degree oven 30 minutes. Turn the potatoes and continue roasting 15 minutes, or until very tender.

      Makes 6 to 8 servings.
