    Rum-Soaked Sweet Potatoes

    List of Ingredients


    • 4 medium sweet potatoes
    • Olive oil
    • 4 sprigs of thyme
    • 1/2 cup butter
    • 1/2 cup brown sugar
    • 1/4 cup rum
    • Thyme and chopped walnuts, for garnish


    Instructions


    1. Rub the sweet potatoes in olive oil, then wrap each one in aluminum foil with a sprig of thyme inside. Bake for 25 minutes at 350 degrees (F).

    2. Melt the butter with the brown sugar and rum; bring the mixture to a simmer, then allow it to reduce until syrupy.

    3. Open the potato with a knife, drizzle the sauce inside and around the edges, then garnish with thyme and chopped walnuts.

      This is good served as a side dish with roast pork loin.

      Makes 4 side-dish servings.
