Rum-Soaked Sweet Potatoes

List of Ingredients
- 4 medium sweet potatoes
- Olive oil
- 4 sprigs of thyme
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup rum
- Thyme and chopped walnuts, for garnish
Instructions
- Rub the sweet potatoes in olive oil, then wrap each one in aluminum foil with a sprig of thyme inside. Bake for 25 minutes at 350 degrees (F).
- Melt the butter with the brown sugar and rum; bring the mixture to a simmer, then allow it to reduce until syrupy.
- Open the potato with a knife, drizzle the sauce inside and around the edges, then garnish with thyme and chopped walnuts.
This is good served as a side dish with roast pork loin.
Makes 4 side-dish servings.
