Rustic Parmesan Mashed Potatoes

â—¦ 3 quarts water
â—¦ Salt
â—¦ 2 pounds baby red potatoes, sliced in half
â—¦ 6 tablespoons (¾ stick) unsalted butter, cut into tablespoons
â—¦ ½ cup finely grated Parmigiano-Reggiano cheese
â—¦ ½ teaspoon freshly ground black pepper
â—¦ 1 tablespoon chopped fresh chives (optional)
Recipe
Bring the water and 2 teaspoons of salt to a boil.
Boil the potatoes until fork-tender, 20 to 25 minutes.
Use a slotted spoon or handheld strainer to transfer the potatoes to a shallow bowl; reserve the cooking water. Top the potatoes with the butter, Parmigiano-Reggiano, ¾ teaspoon salt, and the pepper. Use a fork to smash the potatoes, adding hot cooking liquid as necessary to make the potatoes as creamy as you like (I usually addd about ½ cup).
Taste and adjust the seasoning if necessary.
Sprinkle fresh chives over the top, if using, and serve.
