- 1/2 cup chopped onion
- 3 garlic cloves, minced
- 1 Tbsp chopped fresh ginger
- 1 serrano pepper, split
- 1 Tbsp sesame oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 (1-pound) package fresh collard greens, washed, trimmed, and coarsely chopped
- 1 Tbsp sugar
- 1 Tbsp rice vinegar
Instructions
- Sauté onion and next 3 ingredients in hot oil in a large wok or skillet 1 minute. Stir in salt and pepper. Add greens; sauté 2 minutes. Add sugar and vinegar; cover and cook 3 minutes or until wilted. Remove and discard serrano pepper before serving.
Makes 4 to 6 servings.
