Simple Sautéed Spinach

- 1 Tbsp vegetable oil
- 2 bags (6 ounces each) baby spinach leaves
- 1 tsp butter
- 1/4 tsp salt
- Freshly ground black pepper to taste
Instructions
- In a 10- to 12-inch skillet, heat 1 tablespoon vegetable oil over medium heat. When pan is hot, add garlic and sauté about 1 minute, until golden.
- Add the spinach. When it begins to wilt, toss gently with a large spoon.
- When all the leaves have wilted, remove garlic and stir in the butter, salt and pepper. Toss gently and serve.
Makes 4 servings.
