    Simple Turnip Greens

    List of Ingredients


    • 1 bunch fresh turnip greens (about 4-1/2 lbs.)
    • 1 lb. salt pork or smoked pork shoulder
    • 3 quarts water
    • 1/4 tsp freshly ground pepper
    • 2 tsp sugar (optional)


    Instructions


    1. Remove and discard tough stalks and stems (and discolored spots) from turnip greens. Wash greens thoroughly (rinse until all grit is removed); drain and tear into pieces. Set aside.

    2. Slice salt pork at 1/4-inch intervals, cutting to, but not through, the skin.

    3. Combine salt pork, 3 quarts water, pepper and, if desired, sugar in a Dutch oven; bring to a boil. Cover; reduce heat, and simmer 1 hour.

    4. Add greens, and cook, uncovered, 30 to 35 minutes or until tender. Serve with a slotted spoon.

      Makes 4 to 6 servings.
