Smashed Potatoes

List of Ingredients
- 3 lbs. Yukon Gold potatoes, scrubbed and cut into 3-inch pieces
- 1 cup buttermilk
- 3 Tbsp unsalted butter, at room temperature
- Salt and freshly ground white pepper to taste
Instructions
- In a large pot of salted boiling water, cook the potatoes until fork-tender, 15 to 20 minutes.
- Drain the potatoes in a colander and return to the pot. Dry the potatoes over high heat, tossing them for 1 to 2 minutes, or until all the moisture is evaporated.
- Transfer the potatoes to a large bowl. Immediately mash them with a potato masher. Add the buttermilk and butter to the potatoes and beat them with a wooden spoon or wire whisk to a smooth, but not soupy, consistency. When the liquid is absorbed, add salt and pepper. Taste and adjust the seasonings. Transfer to a serving bowl and serve immediately.
