Southwest Scalloped Potatoes

List of Ingredients
- 1 Tbsp softened butter
- 1 tsp minced garlic
- 3 lbs. white rose potatoes, peeled and sliced 1/8-inch thick
- 3/4 tsp kosher salt
- 1/2 tsp coarse ground black pepper
- 1/2 tsp crushed red pepper flakes
- 1 pint heavy whipping cream
- 1/2 cup grated Pecorino Romano cheese
Instructions
- Butter a 5x8-inch glass or metal pan. Sprinkle garlic in bottom.
- Layer half of the potatoes in the prepared pan. Sprinkle half of the salt, pepper, red pepper, heavy whipping cream and cheese over. Layer in remaining potatoes; repeat layers of salt, pepper, red pepper, heavy whipping cream and cheese. Cover with foil.
- Bake at 350 degrees (F) for 1-1/2 hours. Remove foil and bake an additional 15 minutes to brown.
