    Southwest Scalloped Potatoes

    List of Ingredients


    • 1 Tbsp softened butter
    • 1 tsp minced garlic
    • 3 lbs. white rose potatoes, peeled and sliced 1/8-inch thick
    • 3/4 tsp kosher salt
    • 1/2 tsp coarse ground black pepper
    • 1/2 tsp crushed red pepper flakes
    • 1 pint heavy whipping cream
    • 1/2 cup grated Pecorino Romano cheese


    Instructions


    1. Butter a 5x8-inch glass or metal pan. Sprinkle garlic in bottom.

    2. Layer half of the potatoes in the prepared pan. Sprinkle half of the salt, pepper, red pepper, heavy whipping cream and cheese over. Layer in remaining potatoes; repeat layers of salt, pepper, red pepper, heavy whipping cream and cheese. Cover with foil.

    3. Bake at 350 degrees (F) for 1-1/2 hours. Remove foil and bake an additional 15 minutes to brown.
