    • 1 Tbsp olive oil
    • 1/4 cup chopped shallots
    • 2 bags (10- to 12-oz. each) fresh spinach
    • 1-1/2 tsp balsamic vinegar
    • 1/4 tsp salt
    • 1/8 tsp freshly ground pepper


    Instructions


    1. Heat the olive oil in a Dutch oven. Add the shallots; cook 2 minutes. Add the 2 bags of spinach; cover and cook 3 to 4 minutes, stirring, until spinach wilts. Stir in the balsamic vinegar, salt, and pepper.

      Makes 4 servings.
