Thai-Style Spinach

List of Ingredients
- 2 (10-ounce) pkgs. fresh washed spinach
- 1 Tbsp soy sauce or Thai fish sauce
- 2 tsp honey
- 3 Tbsp lime juice
- 1/2 tsp Thai chili sauce or hot chili oil
- 2 tsp canola or vegetable oil
- 1 small clove garlic, peeled and minced
- 1 Tbsp finely minced fresh ginger root
Instructions
- Pick through the spinach, removing thick stems and wilted leaves. Bring a large pan with about 2 inches of water to a boil, add the spinach, and stir. Cook 2 minutes. Drain, rinsing with cold water until spinach is cooled. Drain well. Press out excess water with your hands. Drain on paper towels. (This can be done in advance; refrigerate, wrapped in a plastic bag.)
- Combine the soy or fish sauce, honey, lime juice and chili sauce or hot chili oil; set aside.
- Heat the oil in a large skillet set over medium heat. Add the garlic and ginger; sauté 1 minute. Add the sauce mixture and bring to a boil. Add the spinach and stir 2 minutes, untl heated through.
Makes 4 servings.
