Uncle Ray's Marinated Beets

List of Ingredients
- 2 bunches small, fresh beets
- 2 cups white wine vinegar
- 1 cup water
- 1 Tbsp coriander seeds
- 2 Tbsp orange rind strips (zest)
- 1/2 cup sugar
- 2 Tbsp chopped dill sprigs
Instructions
- Roast beets in foil in a 400-degree (F) oven for 1 hour or so, depending on size. Let cool; peel.
- Put vinegar, water, coriander seeds and orange zest into a non-reactive saucepan. Bring to a boil. Add sugar and stir in. Set aside.
- Add beets and dill and let mixture cool. Store beets in marinade in sterilized jars in the refrigerator.
