    Uncle Ray's Marinated Beets

    List of Ingredients


    • 2 bunches small, fresh beets
    • 2 cups white wine vinegar
    • 1 cup water
    • 1 Tbsp coriander seeds
    • 2 Tbsp orange rind strips (zest)
    • 1/2 cup sugar
    • 2 Tbsp chopped dill sprigs


    Instructions


    1. Roast beets in foil in a 400-degree (F) oven for 1 hour or so, depending on size. Let cool; peel.

    2. Put vinegar, water, coriander seeds and orange zest into a non-reactive saucepan. Bring to a boil. Add sugar and stir in. Set aside.

    3. Add beets and dill and let mixture cool. Store beets in marinade in sterilized jars in the refrigerator.

      Serves 4
