- 6 Tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 lbs. unpeeled zucchini, diced
- Salt, pepper
- 1/3 cup freshly grated Parmesan or Romano cheese
Instructions
- Heat oil in a skillet, add onion and cook over low heat until golden. Add garlic and cook 20 seconds. Toss in the zucchini and cook another 10 minutes. Season with salt and pepper, and scatter the grated cheese over the top.
