Zucchini Saute

List of Ingredients
- 2 lbs. small zucchini, washed but not peeled, ends trimmed
- 2 Tbsp olive oil
- 2 to 3 Tbsp unsalted butter
- Salt and freshly ground black pepper to taste
Instructions
- Using a very sharp knife or a mandoline, slice the zucchini crosswise into paper-thin rounds. Set aside.
- In a large skillet over medium heat, heat the oil and butter. When the foam subsides, add the zucchini and cook, tossing occasionally, until the zucchini is wilted, ruffled, and just beginning to brown, 10 to 15 minutes.
- Season with salt and pepper to taste and serve immediately.
Makes 4 servings.
