    Arugula & Smoked Mozzarella Salad

    List of Ingredients


    • 1 (12-oz.) head radicchio, halved, cored and very thinly sliced
    • 3 cups packed arugula
    • 1/2 cup thinly sliced, drained, oil-packed sun-dried tomatoes
    • 2 Tbsp fresh lemon juice
    • 1/4 cup olive oil
    • 6 Tbsp pine nuts, toasted
    • 9 ounces smoked Mozzarella, cut into 1/8- to 1/4-inch-thick slices


    Instructions


    1. Mix radicchio, arugula and tomatoes in a large bowl.

    2. Place lemon juice in a small bowl. Gradually whisk in olive oil. Season dressing with salt and pepper. Add to salad; toss.

      Divide salad among 6 plates. Sprinkle salads with pine nuts. Serve with cheese.

      Makes 6 servings.
