    Vegan: Avocado Toast

    Recipe Introduction

    "This is one of those trends that should *never* go out of style. Toni loves avocados so much that her husband hid her engagement ring in an avocado when he proposed during their weekly trip to the farmers' market. The only thing greater than a perfect avocado is one with a sparkly ring inside! It's no surprise: she said yes, and they were saying their 'I do's' four months later! During their wedding, Paul was said to be the avocado to her toast. Toni and Paul, this decadent avo toast is for you."

    List of Ingredients

    â—¦ 1 (4-inch) piece sourdough baguette, sliced down the middle to create 2 open-faced pieces
    â—¦ Drizzle of extra-virgin olive oil
    â—¦ ½ perfectly ripe large avocado, pitted and peeled
    â—¦ Pinch of chunky sea salt
    â—¦ Pinch of cracked black pepper
    â—¦ Pinch of garlic powder
    â—¦ Pinch of red chili pepper flakes
    â—¦ 1 to 2 small handful sprouts, arugula, or microgreens
    â—¦ 4 to 6 cherry tomatoes, halved or quartered
    â—¦ Pinch of black sesame seeds (optional)

    Recipe

    Toast the slices of sourdough baguette in a toaster or toaster oven until golden brown. Drizzle the toasted bread with the olive oil.

    Mash half of the avocado on each slice of bread, spreading it evenly across the face of the bread. Sprinkle with the sea salt, cracked black pepper, garlic powder, and red chili pepper flakes.

    Top with the greens, cherry tomatoes, and black sesame seeds (if using), and enjoy immediately.

    Makes 1 to 2 servings



    • Avocado-Saving Tip:
    How many times have you lost a precious (and expensive) avocado because it overripened before you had a chance to eat it? We've been there—but no more! When you buy avocados, allow them to ripen on the counter. As soon as they're ripe, pop them in the fridge (unopened) and they will remain in that perfectly, ripe, buttery state for more than a week. Magic!
